Last but not least, the Avant-Garde version (Chef’s Work - Optional Advanced Prep):

Preparing the quail:
• Partially debone the quail by removing the wishbone, ribs, and backbone through a small opening at the neck. This requires gentle, precise handling — quail is delicate but rewarding to work with.
• Cross the legs and tie them with kitchen string.
• Stuff each bird with steamed rice, then tie the opening and wings neatly with kitchen string.
• Rub the quail with olive oil, turmeric powder, salt, and pepper.
• Preheat oven to 200°C.

Turmeric sauce:
• From the earlier cooked quail mixture, remove the quail, lemongrass, galangal, and assam skin, leaving only the gravy and potatoes.
• Blend the gravy and potatoes until smooth using a hand blender.
• Strain through a fine sieve for a silky texture. Set aside.

Finishing the quail:
• Heat a drizzle of olive oil in a medium pan over medium-high heat.
• Place the quail breast-side down and sear until golden brown.
• Flip and reduce heat to medium-low. Add 2 tbsp butter and 1 garlic clove.
• Baste the quail with the hot butter for 1–2 minutes, focusing on crisping the skin.
• Transfer to the oven and roast for about 4 minutes, or until the internal temperature reaches 74°C.
• Remove strings and let rest before serving.

Plating:
• Shape two ping-pong-sized balls of steamed rice using your palms. Wrap one with a blanched cabbage leaf, leaving the other plain.
• Use a round cookie cutter to mold the Sayur Pakis Betumis on the plate — gently press down with the back of a spoon to hold shape while keeping it moist but not watery.
• Spoon the hot turmeric sauce onto the plate and place the quail neatly on top.
• Garnish with pennywort on the rice ball, pea shoots beside the quail, and red beet microgreens on the Pakis for color contrast.
